Community Recipes- Darby's Salt and Vinegar Kale Chips




One of the biggest things we get at the Co-op is people who want to eat healthy, but feel totally intimidated when it comes to using the items at the store, especially when it comes to the bulk foods. Well fear not fellow wellness warriors, we are here to help you make the most of what the Co-op has to offer. Starting today, we will be posting recipes by Co-op members and friends, featuring items currently at the store.

Darby’s Salt & Vinegar Kale Chips

Featuring freshly grown Kale from Earth Mountain Farm or Kazuko

(but all other ingredients can be found at the Co-op too!)



Ingredients

One small bunch of kale, about 6 oz.

1 T extra-virgin olive oil

1 T vinegar (I use Bragg's Raw Apple Cider Vinegar, but any vinegar will work)

Sea salt to tastes

Directions

1. Start with a lovely bunch of kale.

2. Cut away the inner ribs and discard, and then tear the kale leaves into same-size pieces.

3. Dry the leaves with either a salad spinner or paper towel.

4. Place Kale in a bag, add a table spoon of olive oil, and massage until the kale is evenly coated.

5. Add vinegar and shake.

6. Arrange the kale pieces in a single layer on the pan so they aren't crowded when they cook

7. Bake at 300 degrees for thirty five minutes.

8. Sprinkle with Sea Salt to Taste
